Fluffy pancakes -
Sunday morning pancakes... I mean why does that sound so good? It's usally a chill day in our house after years of working a Sunday, so when we get the chance to chill, I think pancakes! Pancake are great for breakfast, lunch or tea and to top it off with all your favourite toppings or even plain with a chunk butter, is just so so good.
Ingredients
- 280g Plain Flour
- 2tsps Baking Powder
- 2 x Egg
- 270g Milk
- 50g Caster sugar
Equiptment
- Non stick frying pan / pancake hot plate
- Mixing bowl
- Spoon / Fork
- Chopped milk Chocolate
- Streaky bacon
- Strawberries
- Maple syrup
- Chopped nuts
To Serve
On its own or why not try out one of the following:
3 x fluffy pancakes, 4 x strawberries siced, 4 x streaky bacon, and a good drizzle of maple syrup... yum!
Steps
- Weigh out the flour, sugar and baking powder in a bowl.
- In a jug add your eggs and milk then mix,
- Add the wet ingredients to the dry ingredients and mix until combined.
- Cover and leave it in the fridge for around 30 minutes.
- Once your ready, prepare your frying pan or hot plate, to a high temperature (to heat up), then reducing it to a medium heat, if using a gas hob. If your using an electric hot plate you may need to adjust (I use mine on high all the way through cooking) You may need to use oil if your using a frying pan, I like to use 1cal oil spray in that case.
- You can spoon the mixture in or use a jug, piping bag or a number of methods, which ever you find the easiest. For me I use a medium size ice cream scoop, 1 scoop per pancake is perfect, for the size we like.
- On the hot plate we can fit around 3 large pancakes at a time, be sure to give them space as they will spread a little.
- Once you see little air bubbles appear over the pancake its time to turn it over. This bubbles should take around a minute to appear.
- Turn the pancake over and cook until golden brown and repeat the process.
